Obituary for Stephanie D Opdyke (Grillo)

Stephanie D. (Grillo) Opdyke died Tuesday, March 28, 2023 at Overlook Medical Center in Summit, NJ surrounded by her loved ones. She was 42.
Stephanie was born in Livingston, NJ a daughter to Barbara (Dreyer) and Angelo J. Grillo, living in Long Hill Township before moving to Middlesex two years ago.
She graduated Watchung Hills Regional High School and received a B.S in Nursing from Sacred Heart University in Fairfield, CT.
Stephanie worked for over 19 years at Summit Heath in Summit, NJ as a Certified Medical Assistant, and most recently as a Surgical Scheduler.
During her time she lived in Long Hill Township, she was a volunteer on the Long Hill Township First Aid Squad. When not working, Stephanie enjoyed knitting and crochet, often making blankets for family and friends for their children and babies. She was an avid reader, who loved going to book stores finding deals on books and often read either at the beach, which she loved, or sitting on her deck with her beloved dog by her side.
She is survived by her parents Barbara (Dreyer) and Angelo Grillo, her sister Julie M (Grillo) and her husband Jason McGinn, as well as her nieces and nephews: Ava, Isabella and Jack McGinn, whom she lovingly referred to as her “Chicken” (Ava), and her “potatoes” (twins Isabella and Jack). She is also survived by her many aunts, uncles and cousins, and her love for her German Sheppard King and her deceased dog, Bailey.
Visitation will be Tuesday, April 4, 2023 from 3-7 PM at the Valley Memorial Funeral Home 1012 Valley Rd., Gillette, NJ. A Mass of Christian Burial will be celebrated on Wednesday, April 5, 2023 10:30 AM at St. Vincent de Paul RC Church 250 Bebout Ave., Stirling, NJ. Burial will follow at St. Vincent de Paul Cemetery, Chestnut St. Stirling, NJ. In lieu of flowers, memorial contributions may be made to either the Long Hill Township 1st Aid Squad or St. Hubert’s Animal Welfare Center.
